Baby Diet - Roasted Zucchini, Squash & Potatoes.

Well It's a lovely rainy day here in San Antonio. I'm absolutely loving every minute of the unusually rainy season we've been having. If you guys know me at all you already know that I love rain.

Today I just have a quick baby food recipe to share with you guys. I'm just starting to introduce Zion to purees and I'm really excited. So, I've been doing some reading up on the matter and come to find out, baby food doesn't have to be bland and disgusting according to what I've discovered which makes me even more excited. I want to make foods that hopefully teach Zion to enjoy a large range of flavors. The key word is "hopefully". No picky eaters allowed!! lol!

Roasted Zucchini, Squash & Potato Puree 
          Yellow Squash
          Garlic Clove
          Olive Oil 

Prepare vegetables - wash, peel, chop
Heat oven to 400 degrees
Toss vegetables lightly with olive oil and dill 
pour onto pan and roast in oven until soft
Puree in blender with garlic adding water to receive desired consistency

I didn't really add amounts because you can make as large or as small a batch as you want depending on if you're planning to freeze leftovers for future meals or not. I'm planning to store up so I can have a variety on hand at any given time.
 Let's see how the little man repsonds. 

I think he approves. :) According to the smiles.

  1. That looks delicious! I'm all for feeding babies real food. Have you read Bringing up Bebe? I think you would like it, and would also find more food ideas.

    I often took vegetables I was cooking for our family and made baby food with them. Before adding butter or salt, I'd set them aside and run them through the mini food chopper. I froze the extra servings in ice cube trays then popped them into bags when frozen. With our last baby I bought less than a dozen baby food containers. I mostly mashed food that we were eating.
