Okroshka -Russian Summer Soup

It all started with a random conversation about soup and my commenting on how much I love it. I'm basically one of those people that doesn't agree with the idea that soup is only a winter time food. (or wait, am I the only one?) I honestly can't think of a soup I didn't like regardless of season. Don't test me on that though. So husband decides that I absolutely must try Okroshka, a cold summer soup that his Mother always made and set off to make it for me.

It turned out so super delicious that I just had to share it with you guys.
As much as I would like to I really can't take any credit for this soup because let me tell you....when the husband sets his mind to cooking he pretty much keeps it under control. Fine by me!
 I know his mother would be proud of him if she would have seen him taste test and add ingredients until he had it "just right". When he was satisfied.... at last, he stood up straight and said "wow, it's like my mom made this that's how perfectly it turned out". 

Yes dear! It's perfect. 

In case you're interested here's the ingredients and approximate amounts. 
Of course we didn't have an actual recipe so like I said approximate.

Okroshka Recipe

2 potatoes  - cooked, peeled and diced
2 hardboiled eggs - peeled and diced
2 green onions - chopped
1/2 cucumber - chopped
4 Radishes - sliced super thin
Sausage or ham - diced. we used a mixture of both beef ham and hard sausage
1/3 cup Sour Cream 
4 Tbsp Lemon juice
1 tsp Dill weed - fresh or dried
Salt to taste

Bring 3 or 4 cups water to boil. Let it cool down a bit and add lemon juice and sour cream. 
Add remaining ingredients and stir together carefully. 
Chill and serve.

If you want to eat it in true Russian fashion you must serve it with fresh bread and horseradish spread.

  3. Thank you for sharing! This looks delish! I am a total soup lover as well, ALL year long! There is just something so yummy and comforting about a big bowl of soup and some fresh bread to go with it! What a great hubby to make it just perfect for you as well! ;)

  4. My hubby is another soup lover and he will make soup for all of us whenever he finds something that looks good and wants to try it. I will show him this one and see if it will show up on the table some evening when I'm busy with school work.
