To Tilapia & Days Off!

Good morning!
Today is my first official day off since I started work. Fortunately for me husband has off too so we are having a totally epic day at home the way married people do. Lol! All jokes aside, we just love spending time in each other's presence as cheesy as that may sound. Sleeping in, waking up slowly, and cuddling without worrying about having to meet some deadline. Totally rocks!

Last night for dinner I decided to make fish. We've been eating quite a bit of fish lately. Tilapia in particular. They're super loaded with good things for you. They help you stay alert, burn fat, keep a healthy blood pressure and many other wonderful things. The best part is that the most delicious ways to cook tilapia (baking or grilling) are also the most healthy ways. 

If you're interested in trying it here is basically from memory what I can tell you about how to make it. 
I'm very bad with recipes because I never follow them but here's my best shot

Ingredients:

3 or 4 Tilapia Fillets
Extra Virgin Olive Oil
Salt
Pepper
Garlic Powder
1/2 can Diced Tomatoes with Chiles
** (Pico de gallo would probably work too)
Fresh Cilantro
Lime
Green Pepper
Mushrooms
 Directions:
Preheat oven to 350 degrees
Dab fish dry with paper towel
Rub each side of fish with extra virgin olive oil
Sprinkle with salt, pepper and garlic powder
Place into baking pan with lid.
Pour tomatoes with a little bit of juice over fish.
Add chopped peppers and mushrooms 
**(you can also use whatever you prefer or have on hand with the vegetables)
Squeeze half of lime juice over everything
Slice the other half of lime and toss around on top
Sprinkle with fresh Cilantro
Cover and bake for about 20 minutes until fish is tender

Ready to eat!!
Trust me...at this point the fish will be absolutely perfect. It's so soft it almost melts in your mouth.

  1. Yum! The fish looks really good. I have another recipe for Tilapia that uses lime but this looks even better. :)
